Costa Rica Ghimbi, Coffee Botanical Garden, Honey Process
Costa Rica Ghimbi, Coffee Botanical Garden, Honey Process
The largest private coffee collection in the world, grown on a single exceptional terroir. Nestled in the remote highlands of the Biolley district in southern Costa Rica, Coffea Diversa is no ordinary farm: it is a true coffee botanical garden. Founded in 2003 by Gonzalo Hernandez, this audacious project now gathers over 800 species, varieties and cultivars on one terroir — where most plantations grow just one.
Each micro-lot comes from rare varieties (Laurina, Geisha, Dilla Alghe, Mokka, Bourbon Rey, Rume Sudan and many more) and is processed using the honey method, which preserves part of the mucilage for a cup profile that is at once sweet, complex and silky. Expect a rare, nuanced aromatic palette with notes of caramel and roasted hazelnuts. A tasting experience unlike any other in the world.
