Green rooibos comes from the same shrub as red rooibos, but it isn't fermented, only sun-dried. That single difference changes the colour, the taste, and the antioxidant content, which runs higher than in red rooibos.
The infusion is gentle, with very light tannins and a honeyed taste, plus a grassy freshness the red version doesn't have. Traditionally used to support relaxation and digestion.
