"Chai" simply means "tea" across much of Asia; in India it's always made with spices. Ours combines cardamom, cinnamon, clove and vanilla over a black tea base, with safflower petals added for colour.
The infusion is coppery and warming, with spiced, woody notes and a light peppery edge at the finish. It drinks well plain, but it's at its best steeped in hot, sweetened milk, the way it's traditionally made in India.
